The chef is not afraid to use less fashionable ingredients such as oxtail and pike-perch. The intensity of his no-nonsense dishes makes a convincing case for why these overlooked foodstuffs are deserving of more attention. Ratte potato purée is seasoned with herbs and smoked butter, and served with an intense beurre blanc, dried tuna foam and a generous quenelle of caviar. He is equally adept at pairing crisp veal sweetbreads with candied orange, tandoori carrots and an intense bisque sauce. At De Juwelier, they keep things straightforward yet still surprise you with traditional robust flavours, modern freshness and French finesse.
