‘Benikurage’ refers to the immortal jellyfish, a creature whose cells rejuvenate so it never grows old or dies. The chef, a lover of both marine life and sake, chose the name in hopes for long-term success of his shop. Painstakingly selected sakes from throughout Japan enhance the restaurant’s appeal. To keep the sake flowing, sashimi is served with soy sauce; clear soup with the dense flavour of kombu kelp.
